Over the course of his career, this proud native of Burgundy has worked in a string of exceptional establishments. Now, at the Gorges de Pennafort he continues in the tradition of Chef Da Silva, who established the fame of this elegant Michelin-starred restaurant, making it one of the Var’s most renowned addresses. the legacy of an innkeeper’s soul
This is the story of two men’s connection with an exceptional place and of destinies entwining to better express themselves.
As a lover of Provence and its produce, the discreet and passionate Chef Philippe Da Silva received two Michelin stars in Paris in 1995 before settling at the Gorges de Pennafort with his wife, Martine. The Michelin Guide then awarded him one star, which he never lost, in recognition of his generous and refined cuisine.
At the same time in 1998, Anthony Salliège, who had already worked under Jacques Lameloise and Roland Chanliaud, teamed up with Philippe Braun, faithful companion of Joël Robuchon at the Laurent in Paris. The restaurant’s patisserie chef, François Kartheiser, was behind the initial meeting of Philippe Da Silva and Anthony Salliège which, two years later, saw the young chef lay down his knives in the kitchens of the Gorges de Pennafort. Over the course of seven years, the two men formed a close bond founded on their love of cooking and their shared belief in the importance of generosity and hospitality.
Returning to Burgundy in 2007 to be closer to his son, Chef Salliège then came back to the Var in 2018 after being chosen by Philippe Da Silva to be his executive chef and loyal and trustworthy collaborator. The Michelin-starred chef thus initiated the process of passing on his savoir-faire, together with his strong belief in the importance of hospitality and the art of receiving: “You must be like an innkeeper and know how to welcome people. Food and hospitality must go hand in hand. If you love people, they will reward you amply.”
After the sudden and premature death of Chef Da Silva, Anthony Salliège naturally took over the reins of this Michelin-starred restaurant to help keep Philippe’s spirit alive. Despite the void he left behind, Chef Da Silva still very much embodies the heart and soul of Pennafort. “He particularly passed onto me the very special relationship he had with his customers. Resolutely humble, he was at the service of their pleasure and enjoyment. For me, that’s the true example to follow,” confides Anthony Salliège.
In the dining room, Philippe Da Silva’s wife, Martine, continues to welcome guests with her trademark conviviality and a desire to share with them the chef’s values: pleasure, humility and generosity, all naturally distilled in the very essence of this exceptional establishment.

In keeping with the excellence of the Hostellerie Les Gorges de Pennafort, the wine menu, which includes 600 bottles, gracefully accompanies the dishes prepared by Chef Anthony Salliège. It sparkles with champagne and is naturally rich in regional wines.
Among these, we recommend our "house favourites" produced by the Garrassin family at the Château Saint-Julien, a family-run operation located in La Celle. Guests can also discover the Protected Designation of Origin "Coteaux Varois en Provence".
